Pico de Gallo | |

2 | large tomatoes (e.g., beefsteak variety), finely diced or chopped |
1 | bunch of scallions, chopped |
1 | jalapeño chili, seeded, chopped |
2 - 3 tbsp | lime juice |
2 tbsp | lime juice |
0.25 bundle | cilantro, chopped |

Preparation

Skewers
In a large bowl, whisk together honey, oil, and garlic. Add the grill cheese and asparagus and toss well to coat. Cover and let marinate at room temperature for 30-60 minutes.

Mix all ingredients and season to taste.

Thread the grill cheese and asparagus alternately onto skewers, then grill over medium heat for about 7 minutes on each side. Alternatively, cook in a skillet or frying pan over medium heat for 4-5 minutes on each side.
