Quesadillas with Pineapple and Strawberry Salsa

Señor Maxx

170 g "Maxx 365", freshly grated
2 cups freshly cubed pineapple pieces
3 tbsp. coconut oil
1/8 tsp. salt
1/8 tsp. cinnamon
1/2 shallot
1 small mini bell pepper with the core removed and the rest cubed
1 pc. chicken breast skinned and deboned, grilled, and cut into small pieces
1/2 cup freshly picked coriander leaves
2 tortillas

1 medium-sized tomato, chopped
3/4 cup chopped strawberries
1/4 red onion, finely chopped
1/2 jalapeño hull, with seeds removed, cut into small cubes
1/3 cup freshly picked coriander leaves
Juice of 1 lime
1/4 tsp. salt
1/4 tsp. pepper


In order to prepare the salsa, simply combine all ingredients in a bowl and mix thoroughly. The longer the sauce is allowed to steep, the more intense the flavor will be. It can be stored in the fridge for 2–3 days.


Fry the pineapple, salt, and cinnamon in 1 tbsp. of coconut oil in a pan over medium heat for 6–8 minutes, stirring occasionally until golden brown.


Set the caramelized pineapple pieces aside and heat the onions and jalapeño in 1 tbsp. of coconut oil in the same pan, with a dash of salt.


Add the pineapple again after 3–5 minutes.


Turn the flame down to the lowest level and add half a tbsp. of coconut oil to the pan.


Place a tortilla in the pan and sprinkle with cheese (make sure that there is enough cheese left over for the second quesadilla).


Spread the chicken, cheese, pineapple, shallots, bell pepper, and coriander over the tortilla, sprinkle more cheese on top, and fry until the tortilla is golden brown.


Flip it over and fry the other side until golden brown (take care that the ingredients don’t fall out).


Prepare another quesadilla and serve with strawberry salsa.
