Cheese Soup Shot

Maxx and Hopp

Shoots straight through your taste buds. The cheese soup shot featuring "Der scharfe Maxx". A popular addition to any party or as an amuse-gueule before the main meal.

Ingredients (for 8 people):

100 g "Der scharfe Maxx", freshly grated
100 g "Maxx 365", freshly grated
40 g ghee
8 slightly stale bread slices
1 onion, finely chopped
1 l meat stock
100 ml cream
Nutmeg, freshly ground salt and pepper
1 bunch of chives, finely cut

Preparation:1.

Fry a few slices of the bread in the melted butter at a time and set them aside.

2.

Fry the onion in the remaining butter until the pieces are soft and translucent, add the bread slices again, and pour the bouillon over it all.

3.

Add the cream, bring the whole thing to a boil, and simmer over low heat for a few minutes.

4.

Puree everything with a handheld blender and bring to a boil.

5.

Gradually sprinkle in the grated cheese, stirring constantly.

6.

Season the finished soup before serving, sprinkle with chives, and pour into shot glasses or espresso cups.
